I made this warming version for the first time last year with freshly picked elderberries from the backyard. My trees were very generous! I used this syrup throughout the fall and winter and managed to avoid any major colds or flus and it was an excellent addition to my morning tea! Since it worked out so well last year, I made some again this year and I thought I’d share the recipe in case you wanted to try making some for yourself. I also have elderberries and already made syrup in stock if you’d like to purchase either. If you try out the recipe, let me know how it goes!

Warming Elderberry Syrup

Prep time: 35 minutes, Cook time: 60 minutes

Ingredients:

2 cups fresh elderberries (if using dried elderberries instead, add an extra 1 cup of water)

3 cups spring or distilled water (plus 1 cup if using dried elderberries)

1 bay leaf

1 cinnamon stick

1 whole nutmeg (loosely crushed)

1 tsp cloves

10 echinacea leaves and 2 flower heads

1 inch fresh chopped ginger root

1 cup maple syrup

Directions:

Add berries, water, and herbs to pot

Bring to a boil

Reduce heat and simmer for 40 minutes

Add maple syrup

Remove heat

Strain mixture and bottle

Store in refrigerator for 3-4 months
