I absolutely love my “Meet the Naturopath” Tuesday mornings at the clinic, I have so much fun thinking up new snack recipes and sharing them with the Rosedale Clinic community. I always enjoy hearing interesting stories and getting feedback on the recipes and this one was definitely a hit! All the chocolatey, creamy goodness of peanut butter balls with the packed protein and fibre punch of lentils. Throw in some chia seeds, sesame seeds, and oats and they become power protein balls with no baking required!

Lentil Chocolate-Peanut Power Protein Balls Recipe

Prep time: 20 minutes, Fridge time: 2-3 hours, Makes approx. 20

Ingredients:

1 cup cooked lentils

2 Tbsp peanut butter (or any nut butter you prefer)

1 Tbsp honey

1/3 cup of maple syrup

1/2 tsp vanilla

3 Tbsp cocoa powder

1 Tbsp oats

1 Tbsp chia seeds (plus extra for optional garnish)

1 Tbsp sesame seeds (plus extra for optional garnish)

Directions:

  1. Combine lentils, honey, maple syrup, vanilla and peanut butter in food processor.
  2. Add cocoa powder to food processor and blend.
  3. Pour into bowl and mix in oats, chia, seeds, and sesame seeds.
  4. Allow batter to solidify in fridge for 2-3 hours (or 1 hour in the freezer if you’re short on time).
  5. Roll into balls and top with chia seeds, sesame seeds or both if desired.
