This is a super easy recipe that is great for a snack or even a quick breakfast. The chia seeds are a great combo of protein, fibre, and healthy fats (they may also help with PMS symptoms ladies). The coconut milk is also a great source of fat and is super creamy and delicious!

Chia Seed Pudding

Prep time: 10 minutes, Fridge time: 2-3 hours or overnight

Ingredients:

1 cup coconut milk (or another milk of choice)

1/2 cup chia seeds

1 tsp maple syrup

1/2 tsp vanilla

1/2 tsp cinnamon

Directions:

  1. Combine coconut milk, maple syrup, vanilla, and cinnamon in a blender.
  2. Stir in chia seeds.
  3. Pour into jar, cups, or container and let sit in the fridge for a couple hours or overnight for breakfast in the morning.
  4. Garnish with berries or nuts if desired.
