I love getting creative with what’s growing in the garden. I’ve been trying to use up the dill in my garden before it goes to seed and the borage is growing like crazy so I decided to combine them in this wonderfully cooling dip. In case you’ve never tried borage, (the leaves and flowers are edible) it tastes like cucumber and in my mind cucumber + dill + yogurt = perfect combination. This dip is full of healthy fats and was the perfect companion to my salmon dinner but I think it would also be a great veggie dip!

Borage and Dill Yogurt Dip

Prep time: 5 minutes

Ingredients:

1 cup yogurt*

1 tbsp fresh dill leaves

1 tbsp fresh borage leaves

1 tsp lemon juice

1/2 tsp lemon rind

1/2 tsp salt

borage flowers for garnish

*I used Greek yogurt made with cow’s milk but you could also use a goat milk or coconut milk based yogurt

Directions:

  1. Mix ingredients together in a medium-sized bowl (easy-peasy)
