These were a bit of an experiment. I wanted to make cookies but didn’t have a lot of time and wanted them to be nutritious and delicious. I had too many bananas sitting around at home so started there and let the creativity flow. The result? Delicious, nutritious cookies!
The banana in these cookies provides a high nutrient energy boost, the oats are an anti-inflammatory source of fibre, and the almond butter adds a boost of protein and healthy fat to the mix. Add a little dark chocolate, vanilla, and cinnamon and you’ve got yourself a delicious snack or even breakfast. Who says you can’t eat cookies for breakfast? Especially if they’re as nutritious as these ones!
Banana Oat Chocolate Chip Cookie Recipe
Prep time: 10 minutes, Cook time: 20 minutes
Makes 12 cookies
Ingredients:
2 ripe bananas
1 cup oats
1 tbsp almond butter
1/2 tsp cinnamon
1/2 tsp vanilla
1/4 cup dark chocolate chips
Directions:
1. Mash bananas
2. Mix in oats, almond butter, cinnamon, and vanilla
3. Add chocolate chips to the batter
4. Scoop onto baking sheet and flatten
5. Bake at 350 C for 20 minutes or until edges are toasty brown
